三綠意粉

材料
長通粉 250克
鹽 2茶匙
水 1,500毫升
橄欖油 1 湯匙
蒜茸 1茶匙
洋葱粒 1 湯匙
鮮蘆筍(切成4厘米長,汆水) 200克
西蘭花(汆水) 200克
鮮蘑菇(切片) 100 克
現成羅勒醬 120克
鮮磨黑椒 1 茶匙
調味雞汁 2 茶匙
鮮松子仁 30克
忌廉 125毫升
水牛芝士條 20克
焗松子仁 1 湯匙

做法
煲滾水,加鹽,煮通粉約10分鐘至軟身。瀝乾。
同時間,下油熱鑊炒蒜茸洋葱3分鐘至軟身,加入露荀、西蘭花、蘑菇和羅勒醬。下雞汁和黑椒調味,再加入忌廉和鮮松子仁。
將通粉加入醬汁中,撈勻後上碟,撒上芝士和焗松子仁。

可用其他類型的意粉。樽裝羅勒醬又稱香草意粉醬,超級市場有售。
煮意粉有很多方法,我將西蘭花、蘆筍和羅勒醬三種色的食材,做成這道好味健康又充滿夏日感覺的菜式。

INGREDIENTS
250 g penne pasta
2 tsp salt
1500 ml water
1 tbsp olive oil
1 tsp minced garlic
1 tbsp diced onion
200 g fresh asparagus (cut into 4 cm lengths and blanched)
200 g fresh broccoli florets (blanched)
100 g fresh mushroom (sliced)
120 g ready-made pesto
1 tsp freshly ground black pepper
2 tsp concentrated chicken stock
30 g fresh pine nuts
125 ml cream
20 g shredded mozzarella cheese
1 tbsp roasted pine nuts

STEPS
Cook penne in boiling water with salt until al-dente, about 10 min. Drain.
At the same time, heat oil in pan and saute garlic and onion till soft, about 3 min. Add asparagus, broccoli, mushroom and pesto. Season with concentrated chicken stock and black pepper. Add cream and pine nuts.
Put penne into sauce. Mix well. Add cheese and top with 1 tbsp pine nuts.

TIPS
Can use other forms of pasta. Bottled pesto sauce is available in most supermarkets.
There are so many ways to prepare pasta. Here I mix broccoli, asparagus and pesto to make up the 3 green colors, which looks so summery, healthy and yummy.
