淘大廚藝坊:栗子炆排骨(豬肉篇)
Stewed Spareribs and Chestnuts


栗子炆排骨

材料: *四人份量
腩排300克, 栗子肉200克, 蒜蓉1茶匙, 紅蔥頭1粒(切片), 薑2片, 蔥1棵(切段)

醃料:
胡椒粉少許, 粟粉1 1/2茶匙

調味料:
淘大柱侯醬1 1/2湯匙, 糖1茶匙, 水1/3杯

做法:
1. 腩排加醃料拌勻。
2. 燒熱油, 下腩排以中火煎至略金黃色, 加薑片, 蔥頭, 蒜蓉及栗子炒勻。
3. 倒入調味料煮滾, 轉小火炆25分鐘後, 開大火炒至汁稍杰, 加蔥段炒勻, 即可上碟。
*1 cup = 250毫升

Stewed Spareribs and Chestnuts

Ingredients: *four servings
Spare ribs 300g, Chestnuts 200g, Minced garlic 1 tsp, Shallot 1 pc (sliced), Ginger slices 2 pcs, 1 spring onion (sectioned)

Marinade:
White pepper, Corn starch 1 1/2 tsp

Seasoning:
Amoy Chu Hou Sauce 1 1/2 tbsp, Sugar 1 tsp, Water 1/3 cup

Method:
1. Mix spare ribs with marinade.
2. Heat the oil, fry spare ribs with medium heat until golden brown. Saute ginger slices, shallots, minced garlic and chestnuts.
3. Add seasoning and bring it to boil. Stew for 25 mins over low heat. And then sauté the sauce over high heat until the sauce reduces. Stir in spring onions and serve.
